KL., M. KL, 2. Beni Hari Susanto, S. KL., M. KL Sanitation and food hygiene is an effort to control the factors of food, people, places and equipment that can cause disease or health problems. Human resources greatly affect the state of sanitation hygiene. Human resource factors include education that leads to knowledge about personal hygiene and the environment. The purpose of this study was to determine the relationship between the level of knowledge of sanitation and food hygiene with the behavior of food handlers in the home industry of jackfruit chips UD. Afalia Jaya, Kambingan Village, Tumpang District, Malang Regency. This study used an observational research design with a cross sectional approach. The research sample amounted to 25 people who were taken based on inclusion and exclusion criteria by using total sampling technique. The instrument used was an observation sheet and a questionnaire sheet. The analysis used was univariate analysis and bivariate analysis using the Spearman correlation test. The results shows that the most educational characteristics in the junior high school category were 11 people (44%), the most trainned was in the never attended training category, 23 people (92%), the most level of knowledge was in the poor category, amounted 15 people (60%), and the most behavior in the category does not meet the requirements of 15 people (60%). Based on the Spearman correlation test, all independent variables have a relationship with food handler behavior with a significance value of education (0.050), training (.047), and level of knowledge (0.037). So it can be concluded that there is a relationship between the level of knowledge of sanitation and food hygiene with the behavior of food handlers in the home industry of jackfruit chips.
